Apple Fennel Breakfast Sausage

Breakfast is the most important meal of the day so we don’t joke about it. This no-egg breakfast is not complicated at all. It is a good choice for a good day. Protein-filled, and with the apple you won’t be loosing out on your vitamins and minerals.

Ingredients

900 g minced meat
2 pcs apple
4 tbsp honey
4 tsp fennel seeds
1 tsp ground sage
2 tsp salt
1 tsp chilli powder
1 tsp rosemary
1 tsp black pepper
6 tbsp butter
2 tsp garlic powder
2 tsp onion powder
2 tsp paprika

Method

Toast the fennel seeds in a small saucepan over medium heat for not more than 5 minutes or until fragrant. Also, dice the apple and set aside.

Combine all the other ingredients except the butter in a large bowl and mix thoroughly. Divide the sausage mixture into 16 patties and flatten with your hands.

Melt the butter in a large cast-iron saucepan and add 3-4 patties. Allow the patties to cook for about 5-6 minutes per side until golden brown and cooked through. Keep the heat low to enable it to cook without burning. Repeat the same process for the remaining. Add more butter if necessary. Serve.

This soup is one of the much celebrated recipes from Efik in the Southern Part of Nigeria. It has a high social acceptance and is often served at ceremonial occasions. It is slippery and tasty at the same time. The uniqueness comes from the vegetables.

Ingredients

450 g beef
450 g pomo
1 pc smoked fish
2 cups palm oil
6 cups water leaf
2 pcs seasoning cubes
1 pc onions
5 cups okazi leaf
1 cups crayfish
1 tbsp ground pepper
1 tsp salt

Method

Soak the okazi leaves for about 10 minutes or more, remove water and drain. Cut and pulse the okazi leaves in a blender with little water. Set aside and repeat the same process for the water leaf (Spinach). Ensure the vegetables are not pureed.

Wash the beef, pomo and smoked fish. Set aside .Combine the beef and pomo in a pot, season with seasoning cubes, pepper and salt. Cook until the beef and pomo are tender. Add the smoked fish (chunked) and cook for about 4 minutes.

Stir in about 1-2 cups of palm oil and ½ cup of ground crayfish. Allow to simmer for about 2 minutes. Add the pulsed okazi leaves, stir and add the pulsed water leaf. Allow to simmer for about 5 minutes. Adjust seasoning.
Serve with any swallow of your choice.

Ingredients

2 pcs orange
6 tbsp orange juice
6 tbsp pineapple juice

Method

Firstly peel the oranges. Toss all the ingredients including the peeled oranges in a blender, add 1 cup of ice and blend until smooth. Serve.
