It’s the weekend and what better way to spend it than to make the best out of it.
Here are recipes for three quick three-course meals for that perfect get-together this weekend.
Slow Cooker Creamed Corn
This recipe is a good reason to pull out your slow cooker. It’s creamy and delicious. Consider this when hosting friends because everyone would love you for it. No special skills required and you’re most likely going to have all you need in your kitchen.
Ingredients
680 g corn
4 tbsp unsalted butter
230 g cream cheese
2 tbsp sugar
1 tsp salt
1 tsp black pepper
Method
Place the corn, butter (cubed), cream cheese (cubed) and sugar in the slow cooker. Add salt and pepper to taste.
Stir well and cover and cook on high for 2 hours or on low for 4 hours. Ensure you stir halfway through the cooking and before serving.
Serve.
Watermelon Strawberry Smoothie
Fruity, creamy and good looking! We couldn’t have combined it any better. We made watermelon the stronger flavour here but you can decide to increase the strawberry. The choice is yours but whichever one you choose, you would be having a swell time.
Ingredients
3 cups watermelon
1 cup strawberries
125 mls coconut milk
1 pc lime
Method
Combine the watermelon, strawberries and coconut milk in a blender then squeeze in 1 tablespoon of lime juice.
Process all the ingredients until smooth.
Serve chilled!
Meatzza
You have seen pizza, omelette, indomielette and the likes but this one here… *lips sealed*. This is awesomeness in a plate and NO! It is not the same thing with suya. This is an ideal holiday recipe and it doesn’t take so much effort to prepare.
Ingredients
450 g minced meat
10 pcs rodo
1 bunch basil
2 tsp ground pepper
2 pcs tatase
1 pcs green bell pepper
1 tsp curry powder
2 tbsp white oat
6 pcs tomato
2 pcs onions
1 pinch thyme
1 tsp salt
2 pcs seasoning cubes
2 pcs eggs
2 scoops vegetable oil
Method
Using 4 tomatoes and 4 pepper (blended), prepare stew or sauce with vegetable oil, salt and stock cube.
Wash and slice the remaining tomatoes, pepper, onions. Set all aside.
Place your minced meat in a bowl, add all the spices and seasonings. Mix in well but also carefully.
Add in the oatmeal and eggs. The oatmeal is to bind everything together. you can make use of breadcrumbs but oatmeal is a healthier option.
Gently combine all the ingredients until it forms a ball. Emphasis on gently, don’ overwork the mince. If it is not holding up to a ball, either add another egg or little more oatmeal. Take out the mince and carefully lay out in a lightly greased pan, until all areas are covered
Spread out your stew or sauce unto the mince. Add your toppings – onions, tomatoes, rodo, sliced tatase, green pepper and morarella cheese
Cover with foil, to keep moist and then place in a preheated oven at 200 degrees and allow to cook for about 20 minutes. You will observe that the mince will shrink, but that is expected.
Before serving, top with fresh leaves.
