Here are three quick three-course meals for that perfect get-together this weekend.

Bruschetta

This isn’t bread and stew, it is bruschetta [pronounced bru-ske-ta]. It is beyond being just a sauce, it is fresh food in disguise. To enjoy, try letting the juice soak on the bread. This Italian quick fix is worth trying this weekend, don’t you think so?

Ingredients

10 pcs tomato

2 tbsp olive oil

4 pcs garlic

1 bunch basil

1 tsp salt

1 pc french stick

Method

Dice the tomatoes and ground the pepper, then set aside. Also, chop the basil and mince the garlic. Set aside.

Combine the tomatoes, pepper, garlic, oil, basil, pepper and salt in a bowl and stir gently to blend all the flavour. Cover and refrigerate for hours or overnight.

Preheat the oven broiler setting when the bruschetta has marinated enough. Cut the french stick on the diagonal in ¾ inch slices. Place the bread on a single layer on a sheet pan and broil on the top rack for about 1-3 minutes or until golden brown. But ensure the bread doesn’t burn.

Allow the bread to cool and top with spoonfuls of bruschetta mixture.

Avocado pasta

Eating healthy is one of our top priorities and we love to keep it simple too. This pasta recipe defines both. Do not underestimate the benefit of the avocado in this meal and with its buttery texture, you will be having a good time. Eat to live!

Avocado Pasta

Ingredients

170 g spaghetti

2 pcs avocado

2 pcs garlic

2 tbsp olive oil

1 pinch onion powder

1 pinch chilli powder

3 pcs bacon

1 pc lemon

1 tsp salt

Method

Cook the bacon in a pan until tender. Chop into bite size pieces and set aside. Also, cook the pasta according to instruction on the pack, drain and set aside.

Pit the avocados and remove the skin. Place the avocado, olive oil, garlic, onion powder in the a food processor. Squeeze in 1 tablespoon of the lemon juice and add salt and chilli to taste. Blend until smooth.

Toss the pasta, avocado sauce and bacon immediately.

Serve.

Rice krispies peanut butter balls

How are about making this for the kids this weekend? This will certainly be a pleasant surprise for them that would make you THE BEST MUM IN THE WORLD! This energy-packed snack is without refined sugar. Get started because in 5 minutes you will be done.

Rice Krispies Peanut Butter Balls

Ingredients

1 cup Kellogg’s Rice Krispies

1 tbsp creamy peanut butter

2 pcs banana

2 tsp cocoa powder

5 tbsp oats

Method

Peel the bananas and mash them using a fork. Add the peanut butter and mix to achieve a smooth paste.

Add the cocoa powder, rice krispies and oats and mix thoroughly. Shape the mixture into 10 balls and refrigerate for an hour.

Serve.

Apple and orange juice

Apple and orange are two fruits most people to eat so we made this combo. This juice is 100% natural. No evil vibes, no bad stuff. And whether or not you are part of our healthy lifestyle challenge, you will definitely find this drink irresistible.

Apple Orange Juice

1 pc apple

2 pcs orange

2 tsp honey

1 cup water

Method

Cut the apple into pieces and remove the core. Also, cut the oranges into pieces, remove the seeds and the skin.

Place in a both fruits in a blender, add ½-¾cup of water and process until smooth.

Place a fine mesh over the bowl and the juice over the strainer. Press the puree to squeeze out all the juice out of the pulp. Discard the pulp.

Stir in the honey.

Serve chilled.
